In preparation for Cinco de Mayo, I wanted to share a few of my favorite Mexican dishes and recipes. Ones that are sure to be a hit at your fiesta! And of course, I’m talking about authentic Street Tacos and Mexican Rice. First, let’s start with what you need to get!

Ingredients for the Street Tacos:

1 1/2 lbs Skirt Cut Steak

Coarse Kosher Salt

Ground Pepper

2 Tbsp Worcestershire Sauce

1 Tbsp Olive oil

2 Tsp Chili Powder

1 Tsp Ground Oregano 

1 Tsp Garlic Salt

Toppings & Extras: 

1 Onion Diced

1 Tomato Diced

Chopped Fresh Cilantro 

Corn Tortillas or Small Flour Tortillas

Ingredients for Mexican Rice:

2.5 Cups Rice

1 Tbsp Oil 

1 Scoop Chicken Bouillon

2 Cups Chicken Broth 

~½ Cup of Water

1 Can of Red Tomato Sauce 

First up is the tacos:

  1. Salt your Skirt Steak, be sure to use the Goldilock rule. (Not too much, not too little)
  2. Next slice your steak into small bite-sized cubes. (You can skip this step till after step 6 if you are going to grill your meat)
  3. Let’s work on the marinade for the tacos. In a bowl add the Worcestershire sauce and olive oil. Add the dry ingredients: Chili Powder, Garlic Salt, and Ground Oregano. And mix!
  4. Then add the steak and marinade into a quart-sized bag. Let it chill and marinate in the fridge for about an hour. 
  5. We can take the time when the steak is marinating to prepare the rice and toppings for the tacos. 
  6. Now it’s cookin time! In a pan add some oil and put it on medium-high heat. Throw the steak on there and let it cook for around 4-5 minutes or until brown. 
  7. Next set your oven to broil and put the steak in an oven-safe pan. Put the pan in the broiler of your oven for around 4-5 minutes. This will give the steak a nice color. 
  8. You can prepare your tortillas any way you like, I recommend warming them straight over the stove fire.

Finally the Rice:

  1. Add oil into a pan on medium-high heat. Then add the uncooked rice. (Don’t forget to wash your rice!!)
  2. Then add the chicken bouillon while the rice is browning.
  3. Add 2 cups of chicken broth, the water, and the can of tomato sauce.
  1. Bring to a boil and cover. Let it cook on low for about 15 minutes.
