What is the most important meal of the day? Breakfast of course! Why is that? Breakfast is crucial to have everyday because it replenishes your supply of glucose to boost your energy levels and alertness. Although breakfast meals are important, not all meals are created equal. Some breakfast meals are more nutritious than others. Here I’ve compiled two healthy and more importantly, delicious breakfasts you should try!
Strawberry Granola Pancakes
2 cups whole grain pancake mix
2 tbsp. brown sugar
1 ½ cups milk
2 whole eggs
2 tbsp. vegetable oil
1 tbsp. (heaping) strawberry preserves
8 whole strawberries, chopped
½ cup granola
Extra chopped strawberries, for serving
Extra granola clusters, for serving
Warm pancake syrup, for serving
Vanilla or honey flavored yogurt, for serving
- Make the pancake batter by stirring together the pancake mix, brown sugar, milk, eggs, and oil until combined. Stir in the strawberry preserves, then stir in the strawberries and granola. (Hold back on chopped strawberries for serving.)
- Heat a nonstick skillet or griddle over medium heat. Add a little butter to the pan and fry the pancakes on both sides until golden.
- Serve with strawberries, granola, syrup and yogurt on top.
Green Eggs & Ham
1 tbsp. olive oil
1 bunch curly kale (7 oz.)
2 tbsp. salt, divided
1 tbsp. ground black pepper, divided
Nonstick cooking spray
6 slices breakfast ham or canadian bacon, halved (4 oz.)
12 large eggs
2 cups heavy cream
1 cup grated sharp cheddar cheese, divided
½ cup grated parmesan cheese
¼ cup chopped mixed herbs such as chives, thyme, parsley, plus additional for garnish
- Preheat the oven to 350 degrees. Remove tough stems from the kale and tear the leaves into 3-inch pieces. Place the kale in a large bowl; drizzle with olive oil and sprinkle with ½ teaspoon salt and ¼ teaspoon pepper. Scrunch kale until is is slightly crushed and softened, about 1 minute
- Spray a 10-inch cast iron skillet with nonstick cooking spray. Place the kale in the skillet in an even layer. Tuck the ham slices into the kale.
- In a medium bowl, whisk the eggs until the yolks and whites are combined. Stir in the heavy cream, ¾ cup of the cheddar cheese, parmesan cheese, herbs and the remaining 1 ½ teaspoons salt and ½ teaspoon pepper.
- Pour over and around the kale and the ham. Sprinkle with the remaining ¼ cup cheddar cheese. Bake until the egg mixture is set, 40 to 50 minutes.
