Grilled Chicken Panini Recipe
It’s so easy to get overwhelmed with complicated healthy meals and recipes we see on social media. We most often forget a nutritious and healthy meal can come simply in the form of a sandwich! Or in this case, a panini! As summer comes close to an end, you’ll be reaching for this simple grilled chicken panini recipe.
This recipe consists of only 6 ingredients:
- Grilled Chicken cutlets
- Sourdough bread (ciabatta or focaccia also works)
- Grilled zucchini
- Fresh tomato slices
- Shredded mozzarella cheese
- Fresh chopped basil leaves
Fresh ground pepper and ¼ teaspoon kosher salt is recommended for taste*
Instructions:
- Season zucchini with salt and pepper. Heat a grill pan over medium-high heat.
- Spray with oil and add the zucchini. Grill on each side for about 2 minutes each. Set aside.
- Spray one side of each slice of bread.
- Heat a large skillet over medium-low heat. Place two slices of bread oiled side down on the skillet.
- Top each piece of bread with one ounce of cheese, divide the zucchini on top, grilled chicken, tomato slices and basil and remaining cheese.
- Top with the remaining bread, oil side up. Use a heavy pot or skillet to press it down and cook until the bottom piece is golden, about 4-5 minutes.
- Flip the sandwich over and cook until the other side is golden as well. About 3-4 minutes.
- Cut diagonally and enjoy!
