Ingredients
- 4 chicken breasts, about 8 oz each, sliced in half lengthwise to make 8
- 3/4 cupseasoned bread crumbs, I used whole wheat, you can also use GF crumbs
- 1/4 cupgrated Parmesan cheese
- 2 tbspbutter, melted (or olive oil)
- 3/4 cupreduced fat mozzarella cheese, I used Polly-o
- 1 cup marinara orFiletto di Pomodorocooking spray
Instructions
- Preheat the oven to 450°F. Spray alarge baking sheetlightly with spray.
- Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter inanother bowl. Lightly brush the butter onto the chicken, then dip into the breadcrumb mixture. Place on a baking sheet and repeat with the remaining chicken.
- Lightly spray a little more oil on top and bake in the oven for 25 minutes.
- Remove from the oven, spoon 1 tbsp sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese.
- Bake 5 more minutes or until the cheese is melted.

Apple Crisp
4 medium tart apples, sliced about ¼ inch thick
½ cup granulated sugar
2 teaspoons fresh lemon juice
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 ¼ cups all-purpose flour
1 ¼ cups old fashioned rolled oats
¾ cup packed light brown sugar
⅓ teaspoon salt
10 tablespoons cold butter, cut into small cubes
⅓ cup chopped pecans or walnut
Instructions
Preheat the oven to 350. Spray a 13×9 baking dish with cooking spray or coat with softened butter.
Combine the apples, sugar, lemon juice, cinnamon and cloves in a bowl until well combined. Add to the baking dish.
In a separate bowl, mix together the flour, oats, brown sugar and salt. Cut in the butter with a pastry blender until the mixture resembles course crumbles. Stir in the nuts.
Sprinkle the topping evenly over the apples in the baking dish.
Bake at 350 for 45 minutes, until hot and bubbly.
Serve the crisp warm with a scoop of vanilla ice cream on top.
