Grilled Chicken Panini Recipe

It’s so easy to get overwhelmed with complicated healthy meals and recipes we see on social media. We most often forget a nutritious and healthy meal can come simply in the form of a sandwich! Or in this case, a panini! As summer comes close to an end, you’ll be reaching for this simple grilled chicken panini recipe. 

This recipe consists of only 6 ingredients:

Fresh ground pepper and ¼ teaspoon kosher salt is recommended for taste*

Instructions:

  1. Season zucchini with salt and pepper. Heat a grill pan over medium-high heat.
  2. Spray with oil and add the zucchini. Grill on each side for about 2 minutes each. Set aside.
  3. Spray one side of each slice of bread.
  4. Heat a large skillet over medium-low heat. Place two slices of bread oiled side down on the skillet.
  5. Top each piece of bread with one ounce of cheese, divide the zucchini on top, grilled chicken, tomato slices and basil and remaining cheese.
  6. Top with the remaining bread, oil side up. Use a heavy pot or skillet to press it down and cook until the bottom piece is golden, about 4-5 minutes.
  7. Flip the sandwich over and cook until the other side is golden as well. About 3-4 minutes.
  8. Cut diagonally and enjoy!
