Stuffed mini peppers appetizer
Ingredients:
- Sweet mini peppers
- Cheese- preferably a tangy cream cheese to mix with broccoli and chives and a shredded cheddar to melt on top of the pepper boats.
- Chopped chives
- Fresh broccoli
Directions:
- Prep the peppers- Preheat the oven to 400°F. Cut the peppers in half lengthwise then remove the seeds and inner membrane.
- Make the filling- Mix cream cheese, chives, salt and pepper in a bowl and stir in the broccoli florets until well combined.
- Stuff peppers- Spoon the filling into the pepper halves, being careful not to overstuff the peppers or you’ll have the filling falling out on all sides.
- Bake the peppers- Lay the peppers on a baking sheet for about 9-11 minutes. Sprinkle cheese on peppers and place them back in the oven to bake for another 3-4 minutes. Wait to cool before serving.
Healthy eggnog recipe
Ingredients:
- 6 large egg, yolk
- 1/3 cup maple syrup, pure
- 3 cup milk
- ½ teaspoon nutmeg
- ¼ teaspoon cinnamon
- 1 teaspoon vanilla extract
Directions:
- Whisk eggs, maple syrup, and milk in a medium saucepan, and then place on a burner over medium heat. Whisk regularly until the mixture reaches 160* F or so and coats the back of a metal spoon slightly.
- Remove from the heat and allow to cool for 10 minutes. Then mix in the spices and vanilla.
- Chill in the fridge for a few hours or overnight.
- Whisk well before serving.
Frozen Banana Bites with Dark Chocolate
Ingredients:
- 2 ripe bananas
- 1/2 cup dark chocolate (70% cocoa or higher)
- 1/4 cup crushed almonds or coconut flakes (optional)
Directions:
- Slice the bananas: Slice the bananas into 1-inch thick rounds.
- Melt the chocolate: Melt the dark chocolate in a microwave or over a double boiler.
- Dip the banana slices: Dip each banana slice halfway into the melted chocolate, then place them on a parchment-lined baking sheet.
- Add toppings: Sprinkle with crushed almonds or coconut flakes if desired.
- Freeze: Freeze the banana bites for about 1 hour or until the chocolate hardens. Serve frozen.
