Lemony courgette tagliatelle:

  1. 2 tbsp olive oil
  2. 2 courgettes (zucchini), trimmed and coarsely grated
  3. 1 garlic clove, minced
  4. 1 red chili, finely chopped
  5. 180g tagliatelle
  6. 1 lemon, zested and juiced
  7. ½ bunch of parsley 
  8. optional: cooked shrimp

Heat the oil in a pan and fry the courgette for 4-5 minutes, then add garlic and chili 

Cook the tagliatelle (leave a small amount of water)

Mix the tagliatelle and courgette mixture then add lemon zest and juice and parsley.

Optional: Add some shrimp if you are looking for more protein!

Voila! Your yummy Valentine’s Day meal is ready to eat! Simple. Delicious. Healthy.
