Many traditional dishes served during Thanksgiving are typically filled with unhealthy ingredients that can leave you feeling sick to your stomach. Unfortunately, traditional Thanksgiving stuffing can be a very fatty, high-carb dish. However, this healthy twist to a classic holiday staple replaces the bread with cauliflower, making it gluten-free and low-carb. Low-carb cauliflower stuffing is also a simple 4-step recipe that is perfect for cooking if you’re short on time. Cook this for you and you loved ones for your next Thanksgiving gathering!

Ingredients:
- 4 tbsp butter
- 1 onion, chopped
- 2 large carrots, peeled and chopped
- 2 celery stalks, chopped or thinly sliced
- 1 small head cauliflower, chopped
- 1 c. (8 oz.) package baby bella mushrooms, chopped
- Kosher salt
- Freshly ground black pepper
- 1/4 c. freshly chopped parsley
- 2 tbsp freshly chopped rosemary
- 1 tbsp freshly chopped sage (or 1 tsp. ground sage)
- 1/2 c. low-sodium vegetable or chicken broth
Directions:
- Melt butter in a large skillet over medium heat. Add onion, carrots, and celery into the skillet and sauté until soft (7-8 minutes).
- Add cauliflower and mushrooms into skillet and season with salt and pepper. Cook until tender (8-10 minutes more).
- Add parsley, rosemary, and sage and stir until combined. Add broth and cook until completely tender and broth is absorbed (10 minutes).
- Serve and enjoy!
Tip: If you enjoy your stuffing with a crispy top, broil the casserole for 2-5 minutes after it’s finished cooking on the stove.
